Speedy Garlic Mashed Potatoes

What You'll Need:
  • 1 (22 ounce) package frozen mashed potatoes
  • 2 1/3 cups milk
  • 1 (4 ounce) container garlic-and-herb spreadable cheese (see Note)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
What To Do:
  1. Stir together frozen potatoes and milk in a large microwave-safe bowl. Microwave, covered, at HIGH 10 minutes.
     
  2. Stir in cheese, salt, and pepper. Microwave at HIGH  an additional 3 minutes or until cheese melts and mixture is thoroughly heated. Serve immediately.
     
Notes

If you can't find garlic-and-herb spreadable cheese, make your own by combining 1 (3-ounce) package cream cheese, softened and cubed; 3 tablespoons butter; 1 minced clove of garlic; and 1/2 teaspoon of your favorite herb.
