Sweeter Potato Dumplings

Kartoffel means "potato" in German and, let me tell you, are these ever sweet potato dumplings...well, they're not made with sweet potatoes, but they're dumplings made with potatoes, and they're sweet. Get it? (Now you've gotta try it, right?!)

Makes: 1 dozen

Preparation Time: 8 min

Cooking Time: 5 min

What You'll Need:
  • 6 cups water
  • 2 cans (10-3/4 ounces each) condensed chicken broth
  • 2 cups warm mashed potatoes
  • 1 1/4 cups all-purpose flour
  • 2 eggs
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sugar
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cinnamon
  • 1/2 teaspoon salt
What To Do:
  1. In a soup pot, bring the water and broth to a rolling boil over high heat.
     
  2. Meanwhile, in a large bowl, combine the remaining ingredients; mix well.
     
  3. Carefully drop the batter by 1/4 cup measures into the soup pot to form dumplings and boil for 5 to 7 minutes, or until firm. Remove with a slotted spoon and serve.
Notes
