Yellow Rice

Hmm...we need something to serve with our saucy Tex-Mex favorites. Oh, yeah, this rice makes a colorful addition to any meal!

Serves: 4

Cooking Time: 25 min

What You'll Need:
  • 1 cup long- or whole-grain white rice
  • 2 cups water
  • 2 teaspoons olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cumin
  • 3/4 teaspoon salt
What To Do:
  1. In a medium-sized saucepan, combine all ingredients and bring to a boil over high heat, stirring constantly. Reduce heat to low, cover, and simmer 20 minutes.
     
  2. Remove from heat and let sit 5 minutes.
     
  3. Fluff rice and serve.
     
Notes

Traditionally, saffron is used to color and flavor Mexican rice, but we don't always have it on hand and, besides, it's really expensive. So we decided to replace it with turmeric, and, you know what? It tastes just as good!
