Southwestern Corn Pudding

When you entertain you always want to try to serve something different. This one should be a welcome change!

Serves: 8

Cooking Time: 55 min

What You'll Need:
  • 1 cup milk
  • 4 eggs, well beaten
  • 2 tablespoons butter
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup biscuit baking mix
  • 2 (15 to 17 ounce each) cans whole kernel corn, drained
  • 2 tablespoons chopped bottled or canned jalapeño peppers, drained
What To Do:
  1. Preheat oven to 375 degrees F.  Coat an 8-inch square baking dish with cooking spray.
     
  2. In a medium-sized saucepan, over low heat, combine milk, eggs, butter, salt, and pepper; stir until butter has melted. Do not overheat or mixture will congeal.
     
  3. Remove from heat, stir in biscuit baking mix, corn, and peppers. Pour into prepared baking dish. Bake 50 minutes or until golden brown and center is set.
Notes

Cut or scoop into serving-sized portions.
