Cucumber Dill Dip

This Cucumber Dill Dip features Pennsylvania Dutch flavors, and it's just what you'll wanna mix up when summer gardens are overflowing with fresh cucumbers and dill.

What You'll Need:
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 (8-ounce) package cream cheese, softened
  • 1 medium cucumber, peeled, seeded, and chopped
  • 1 tablespoon chopped fresh parsley
  • 1 cup chopped scallions (green onions)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely chopped fresh dill or 1/2 teaspoon dried dillweed
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
What To Do:
  1. Place all ingredients in a food processor or blender jar; process until almost smooth.
     
  2. Pour into a bowl, cover, and chill for 2 hours to "marry"" the flavors.
     
Note

Serve this as a dip with veggies, crackers, tacos, or chips, or use as a salad dressing.

Can I sub greek yogert for mayo

A Tzatziki dip might be more to your liking. Uses Greek yogurt and no mayo. This is not the recipe I typically use but in keeping mind that this is a Mr. Foods site, here is their version. http://www.mrfood.com/Relishes-Sauces-Seasonings/G == reek-Tzatziki-Sauce-5445/ct/1 (hope the hyperlink comes through) One note is that the yogurt needs well drained. Greek yogurt is usually thick enough but if using regular plain yogurt, line a strainer with a coffee filter, spoon in yogurt and allow yogurt to strain for at least an hour, longer if possible. Use only the yogurt in the filter for recipe.

I had a cucumber dill recipe that has been lost, but it was a little spicy which is why I gave this one a 3 star because it is like the one I had only on the mild side. If anyone out there has a Cucumber Dill recipe that has a kick to it I would be interested to hear about ot.

Do a lot of summer potlucks and these recipes are super. I try a new one each time. They always want my recipe. Recipe box is filling up. And that's a "Ohhh, it's a good thing".
