What You'll Need

  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 1 (28-ounce) can whole peeled tomatoes, drained
  • 3 garlic cloves, chopped
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon sugar
  • 1/2 cup chopped black olives
  • 1/4 cup chopped fresh parsley

What to Do

  1. In a large skillet, heat olive oil; sauté onion over medium heat just until softened. Add tomatoes, garlic, bay leaf, thyme, red pepper, and sugar.

  2. Reduce heat and simmer for 30 minutes, stirring occasionally.

  3. Stir in olives and parsley and cook for 10 minutes more.

  4. Remove bay leaf before serving.

  5. Makes 2-1/2 cups


Notes

Serve with steak, fish, or chicken.
