Balsamic Vinaigrette

All vinegar is not created equal. Uh uh! Balsamic vinegar is an ideal addition to almost any salad dressing but it takes center stage in this Balsamic Vinaigrette.

Ingredients
  • 1/2 cup balsamic vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup olive oil
Instructions
  1. In a medium bowl, whisk together vinegar and mustard. Add salt and pepper. Pour in olive oil very slowly, whisking constantly until well combined and creamy.

Makes about 1-1/2 cups dressing.

Note

In addition to serving this over your favorite mixed greens, try it over asparagus that you've steamed then chilled. Yummy!
