Creamy Caesar Dressing

Did you know that the original Caesar salad was invented at a restaurant in Tijuana, Mexico? And that anchovies were not an original ingredient? Here's my version of this now world-famous dressing.

What You'll Need:
  • 1 1/2 cups mayonnaise
  • 3/4 cup half-and-half or milk
  • 3/4 cup grated Parmesan cheese
  • 2 cloves fresh garlic
  • 1/4 teaspoon pepper
  • 3 anchovy fillets or 1/8 teaspoon salt
What To Do:
  1. Combine all the ingredients in a blender jar and blend on medium-high speed, scraping sides occasionally, until smooth and creamy. Cover and chill until ready to serve.

    Makes about 21/2 cups.

Notes

Just before serving, toss gently with cut romaine lettuce and top with croutons. Do not toss with the greens until ready to serve.
