Bimini Shrimp Kabobs

Just a short flight from Fort Lauderdale, Florida, is the tiny fishing island of Bimini. Famous for its fishing grounds, the island also boasts many interesting seafood dishes, like this kabob skewered with shrimp, peaches, and peppers.

Serves: 4

Cooking Time: 15 min

Ingredients
  • 8 skewers
  • 1 pound medium-sized shrimp (40-count), peeled and deveined with tails left on
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground ginger
  • 2 fresh peaches, peeled and chopped, or 2 cups canned peaches, drained
  • 1/2 a small green bell pepper, finely chopped
  • 1/2 a small onion, finely chopped
Instructions
  1. If using wooden skewers, soak in water for 20 minutes. Coat a broiler pan or rimmed baking sheet with nonstick cooking spray.

  2. Preheat the broiler. Place 5 shrimp onto each skewer and place on the broiler pan.

  3. In a small bowl, combine the lime juice, honey, black pepper, and ginger; mix well. Remove 2 tablespoons of the mixture to a medium bowl and set aside. Brush both sides of the skewered shrimp with the remaining mixture and broil for 4 to 5 minutes, or until pink.

  4. Meanwhile, add the remaining ingredients to the reserved mixture; mix well to make a peach salsa. Spread the salsa over 4 serving plates and top each with 2 shrimp skewers. Serve immediately.
