Chilled Shrimp with Lime

The Spanish name for this dish is ceviche con camarones. Sounds fancy, huh? Well, it's a bright and tasty seafood salad perked up with lively salsa and a super lime marinade. Call it what you like, but any way you say it, it's "muy bueno", which means it's very good!

Serves: 6

Preparation Time: 5 min

Chilling Time: 4 hr

What You'll Need:
  • 1 (12 ounce) package frozen cooked shrimp, thawed and coarsely chopped
  • 2 cups fresh lime juice
  • 3 large tomatoes, seeded and chopped
  • 1 onion, chopped
  • 1/3 cup chopped fresh cilantro
  • 3 garlic cloves, minced
  • 1/2 cup salsa (see Note)
  • 1/3 cup olive oil
What To Do:
  1. In a medium bowl, combine shrimp and lime juice. Cover and chill 2 hours.
     
  2. Rinse shrimp, drain, and return them to bowl. Add remaining ingredients and toss well. Cover and chill at least 2 hours before serving.
     
Notes

We like to use hot salsa to add a spicy twist, but any salsa will taste great. Serve this with your favorite crackers, thin slices of toasted French bread, or flour tortillas that have been cut and toasted.
