Deviled Crab

Everybody loves crab cakes but they tend to be a bit pricey. Well, this version of crab cakes is economical since it starts with imitation crabmeat, plus it’s baked rather than fried, so there’s even more to love.

Ingredients
  • 1 tablespoon vegetable oil
  • 1 green bell pepper
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 1 pound imitation crabmeat, flaked
  • 1/2 cup bread crumbs
  • 1 egg, beaten
  • 1 teaspoon yellow mustard
  • 1 tablespoon ketchup
  • 1 tablespoon mayonnaise
Instructions
  1. Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
     
  2. In a large skillet, heat oil over high heat. Add green pepper, onion, and celery, and saute until tender.
     
  3. In a medium bowl, combine with remaining ingredients; mix well then form into 16 patties and place on prepared baking sheet.
     
  4. Bake 18 to 20 minutes, or until golden. Serve warm.
