Boiled Peanuts

In Georgia, peanut farmers celebrate the harvest with peanut boils. These are large outdoor get-togethers where everybody eats freshly boiled peanuts. Boy, are they good! They have a different taste from the roasted peanuts most of us are used to, so be prepared for a whole new treat!

Cooking Time: 2 hr 10 min

Ingredients
  • 6 cups water
  • 2 pounds green peanuts (see Note)
  • 1 1/2 teaspoons salt
Instructions
  1. In a soup pot, bring all the ingredients to a boil over high heat.

  2. Cover loosely and continue to boil for 2 hours, or until the peanut hulls open easily when pressed and the peanuts inside are soft.

  3. Drain and serve warm, or transfer to an airtight container and chill until ready to serve.

    Makes 2 pounds.

Notes

It used to be that this could only be made when fresh green peanuts were in season. But today many supermarkets sell them frozen. The quantity of salt is up to you, depending on how salty you like these.
