Cheesy Mac and Chicken Soup

This one is like a hearty, warm hug. Yes, our Cheesy Mac and Chicken Soup literally cooks itself in our slow cooker, so that we come home to a creamy, rich bowl of soup that is as comforting as can be.

What You'll Need:
  • 3 1/2 cups low-sodium chicken broth
  • 1 (16-ounce) package frozen mixed vegetables
  • 1 (10.75-ounce) can cream of chicken soup, undiluted
  • 2 cups chopped cooked chicken
  • 1 (16-ounce) package pasteurized prepared cheese product, cubed
  • 1 (20-ounce) package frozen macaroni and cheese
What To Do:
  1. In a 5- to 6-quart slow cooker, combine chicken broth, mixed vegetables, cream of chicken soup, and cooked chicken.
     
  2. Cover and cook on LOW setting 4 hours. Add cheese and frozen macaroni and cheese. Cover and cook on LOW setting 2 additional hours, or until cheese melts and soup is thoroughly heated.

This was easy to make, but the family thought it was bland. We tasted the broth about 1 hour prior to serving and added about 1/2 tsp of black pepper and 1/2 tsp of garlic granules. Each member of the family was able to salt to taste each of their bowls. I was happy as is, but the Hubby did add some additional season salt. We garnished each bowl with some pepper jack cheese, just to add a dash of zip.

this was really good but seemed to need a little zip. any suggestions?

Add a little hot sauce or maybe add pieces of jalapeo peppers.

I'm not too sure what I did wrong...except maybe put in too much cheese, but this was just an outstanding dish. Turned out more like a casserole, which was great...I hope I can make the same mistake again.! LOL

I would like to swap the macaroni with a whole wheat product if possible.

use a whole wheat pasta

People....if you don't want to make the recipe, don't make it...no need to leave an opinion of how bad you think it is healthwise. There are other websites you can access with healthier recipes if that's your preference.

No one is saying that people have to make this recipe. I have made it a couple of times and have permanently added it to my recipe box on Mr. Food .com.

This recipe is full of salt. Please use heart healthy recipes.

Ron - perhaps you'd be happier at a heart healty recipe site - and we wouldn't have to read these whinning comments from you people that don't know how to adjust a recipe to your physical needs?

I have never seen frozen mac and cheese, unless it's something like lean cuisine

There are plenty of frozen mac and cheese at your grocery store. You can get it in the small box for one or a family container; just look in the freezer section. I know the names of several, but I don't think we're supposed to put name brand on this site.

I could not find an entre 20 oz size so I bought 2 individual 8 oz sizes and I also used half cubed cheese and half shredded. It worked great and it was really Good!

Check the Stouffers freezer section! Family or individual sizes!

What if you make a box of cheese & macaroni and add that when you get home instead of using the frozen?

This sounds really good - and I love cooking with the slow cooker, but the comment that most people do work 8 hrs so how do you add the rest of the ingrediants after 4 hrs?

How can you say this will be ready for you after work, when the recipe requires you to add ingrediants after 4 hrs. Most people work 8 hrs.

the newer slow cookers have timers so you can set it to start a few hours before you get home
