Cheesy Potato Soup

Do not make this Cheesy Potato Soup unless you're planning on serving it with plenty of crusty bread for dunking. It's so creamy and good, you wouldn't want to leave one drop behind.

Serves: 10

What You'll Need:
  • 7 cups chicken broth
  • 2 cups (1 pint) half-and-half
  • 2 1/2 cups instant mashed potato flakes
  • 4 cups (16 ounces) shredded sharp Cheddar cheese, divided
  • 1/2 teaspoon black pepper
  • 2 scallions (green onions), thinly sliced
What To Do:
  1. In a soup pot, combine chicken broth, half-and-half, potato flakes, 3-1/2 cups cheese, and the pepper; mix well. Bring to a boil over medium-high heat and cook 2 to 3 minutes, or until thickened, stirring constantly.
     
  2. Top with remaining 1/2 cup cheese and the scallions. Serve immediately.
