Easy Vegetable Chicken Noodle Soup

Nothing is more welcome than a nice, big bowl of soup. Here's a really rich whole-meal feast your family's gonna thank you for!

What You'll Need

  • 2 tablespoons vegetable oil
  • 2 garlic cloves, minced
  • 1 medium-sized onion, chopped
  • 4 medium carrots, sliced
  • 2 cups fresh broccoli florets
  • 2 cups sliced fresh mushrooms
  • 1 cup sliced celery
  • 4 cups water
  • 4 (10-1/2-ounce) cans condensed chicken broth
  • 1 teaspoon dried dillweed
  • Salt to taste
  • Pepper to taste
  • 2 cups chopped cooked chicken
  • 8 ounces egg noodles or other medium pasta shape

What to Do

  1. In a large pot or Dutch oven, heat oil over medium-high heat; add garlic and onion and saute until onion is tender.
     
  2. Add remaining ingredients, except the pasta, and bring to a boil. Reduce heat and simmer 20 minutes.
     
  3. Meanwhile, in a large pot of boiling salted water, cook pasta to desired doneness; drain and stir into soup. Heat through and serve.

Looking at this as a Vegan, I think I could lose the chicken & ck broth and add nutritional yeast and other seasonings. Another great way to use noodles--without the eggs of course.

This sectioon is called RATINGS AND REVIEWS for a reason so why are there so many comments that are not Ratings nor Reviews? I think this section is for those who have tried the recipe not for anything else. Come on people, give us a break!

Nutritional information would be helpful. As a diabetic, in which sodium content has a tendency to upset the blood sugar readings, I actually work within those limits, as well as watching carbs.

So Jacquesalarie, Make the portions smaller or make the full pot and freeze the rest.

Sounds very tasty BUT totally useless for a single senior living alone, would have enough soup for 6 months

I'm withyou jacquesalarie...there are a lot of single seniors or just single people out there..Mr Food needs to come up with recipes for us...I know you can cut them down but it usually don't taste right after you butcher it...And i can't freeze it cause my freezer is full...I just had to reply..Haven't done so in awhile...I've got a bunch of Mr Foods recipes in my favorites column...
