Ham and Bean Pot

We love to get cooked-all-day flavor without a lot of fuss, and this recipe's got it! If you want a little kick, stir in some salsa or black pepper. If you can't find the can sizes or the beans called for here, use something close; this is an accommodating recipe.

Serves: 8

Cooking Time: 35 min

What You'll Need:
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 2 cups coarsely chopped cooked ham
  • 2 (16-ounce) cans navy beans
  • 1 (15.5-ounce) can field peas with jalapeno peppers or regular black-eyed peas
  • 1 (15-ounce) can chunky bean and ham soup
  • 1 (11-1/2-ounce) can condensed bean and bacon soup, undiluted
  • 2 3/4 cups water
What To Do:
  1. Melt butter in a Dutch oven; add onion and bell pepper, and cook, stirring constantly, until tender.

  2. Stir in ham and remaining ingredients; bring to a boil. Reduce heat, partially cover, and simmer 30 minutes or to desired consistency, stirring occasionally.
