Lobster and Chive Bisque

Serve this fancy bisque with breadsticks and a simple green salad for an oh-so quick meal! And if lobster is not in your budget, try substituting an equal amount of surimi. Available in the seafood sections of most supermarkets, surimi is made from mild, white-fleshed fish and is colored and flavored to resemble various types of shellfish.

Makes: 5 cups

Cooking Time: 20 min

Ingredients
  • 2 tablespoons butter
  • 1 tablespoon minced onion
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1 cup heavy whipping cream
  • 1/2 cup dry sherry or chicken broth
  • 1 teaspoon salt
  • 1/8 teaspoon paprika
  • 1 cup cooked lobster meat (about 1 pound)
  • 2 tablespoons chopped fresh chives or 2 teaspoons dried chives
Instructions
  1. Melt butter in a Dutch oven over medium heat. Saute minced onion 1 minute or until tender. Add flour, stirring until blended. Cook 1 minute, stirring constantly.
     
  2. Gradually add milk and next 4 ingredients. Bring just to a simmer; cook, uncovered, 15 to 18 minutes or until slightly thickened (do not boil). Stir in lobster and chives.
