New Year's Soup

This soup may be called New Year's Soup, but it's so delicious it will make everyday great!

Serves: 6

What You'll Need:
  • 1 (16-ounce) package dried black-eyed peas
  • 3 (14-ounce) cans seasoned chicken broth with roasted garlic
  • 2 (14-1/2-ounce) cans diced tomatoes with celery, onion, and green bell pepper
  • 1 (10-ounce) can diced tomatoes and green chilies
  • 1 (10-ounce) package frozen chopped onion
  • 2 cups diced cooked ham
  • 3/4 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 (1-pound) package chopped fresh collard greens
  • Hot sauce
What To Do:
  1. Place peas in a 6-quart slow cooker. Cover with water 2-inches above peas; let soak 8 hours (see Note). Rinse and drain; return peas to slow cooker.
     
  2. Stir broth and next 6 ingredients into peas; add greens.
     
  3. Cover and cook on HIGH setting 10 hours or until peas and greens are tender. Serve with hot sauce.
     
Notes

Before you turn in for the night, soak the peas and they'll be ready for the slow cooker the next morning. Adding the whole package of collard greens to the slow cooker will fill it up to the brim, but don't worry about it overflowing. Just place the cover over the slow cooker, and allow a few hours for the greens to wilt.
