Homemade chowder is known for taking a long time to sit and simmer. But what if you want that homemade chowder taste and just don't have the time? Not to worry 'cause our easy chowder recipe for Quick Shrimp Chowder cooks up in about 20 minutes, making it simpler than ever to get some down-home cooking on the dinner table.

What You'll Need

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 (10-3/4-ounce) cans cream of potato soup, undiluted
  • 3 1/2 cups milk
  • 1/4 teaspoon ground red pepper
  • 1 1/2 pound medium-sized peeled; fresh shrimp (see note)
  • 1 cup (4-ounces) shredded Monterey Jack cheese
  • Oyster crackers (optional)

What to Do

  1. Melt butter in a Dutch oven over medium heat; add onion, and saut 8 minutes or until tender. Stir in soup, milk, and pepper; bring to a boil. Add shrimp; reduce heat, and simmer 5 minutes or until shrimp turn pink, stirring often. Stir in cheese until melted. Serve immediately. Serve with oyster crackers, if desired.

Notes

You can substitute 1-1/2 pounds thawed frozen peeled shrimp 1-1/2 pounds peeled crawfish tails, or 3 cups chopped cooked chicken for the 1-1/2 pounds medium-sized fresh shrimp. If you want to start with unpeeled shrimp, buy 2 pounds in the shell.
