Scandinavian Cabbage Soup

This cheesy version of cabbage soup is inspired by an old world recipe. Scandinavian Cabbage Soup is chock full of veggies and creamy richness, making it a healthy and hearty main dish soup.

Serves: 6

Cooking Time: 30 min

What You'll Need:
  • 1/2 cup (1 stick) butter
  • 2 cups chopped cabbage
  • 1 cup sliced onion
  • 1 cup sliced celery
  • 1 cup frozen peas, thawed
  • 1 cup thin carrot slices
  • 1 (16 ounce) can cream-style corn
  • 3 cups milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 2 cups (8 ounces) shredded Cheddar cheese
What To Do:
  1. In a large soup pot, melt margarine, saute cabbage, onion, celery, peas and carrots until tender, about 8 to 10 minutes.
     
  2. Add corn, milk, salt, pepper, thyme and garlic powder; simmer about 15 minutes. Add cheese, stirring until melted and serve immediately.
