Super Easy Tortilla Soup

Using leftover chicken or turkey (or a store-bought rotisserie chicken) allows this Super Easy Tortilla Soup recipe to come together in no time at all!

Serves: 4

Preparation Time: 8 min

Cooking Time: 30 min

What You'll Need:
  • 4 celery ribs, chopped
  • 3 carrots, chopped
  • 1 (10-ounce) can mild enchilada sauce
  • 4 cups water
  • 6 chicken bouillon cubes
  • 1/2 teaspoon lemon pepper
  • 2 cups chopped cooked chicken (see Note)
  • Crushed corn tortilla chips
What To Do:
  1. Bring first 6 ingredients to a boil in a saucepan over medium heat. Reduce heat, and simmer 20 minutes, stirring occasionally.
     
  2. Stir in chicken, and cook until thoroughly heated.
     
  3. Place tortilla chips evenly into bowls; spoon soup evenly over chips. Serve immediately with desired toppings.
     
Notes

If you have leftover chicken or turkey, use it up in this easy soup-you only need 2 cups. If you don't have leftovers, no worries-just pick up a deli-roasted chicken from the grocery store. You'll get 3 to 3-1/2 cups chopped chicken from a whole bird.
