Tomato Basil Bisque

Canned tomato soup gets a flavor boost from buttermilk and fresh basil in this tasty little teaser. We've served it warm, and we've served it cold - either way it'll be a hit!

Makes: 7 cups

Cooking Time: 6 min

Ingredients
  • 2 (10-3/4-ounce) cans tomato soup, undiluted
  • 1 (14-1/2-ounce) can diced tomatoes
  • 2 1/2 cups buttermilk
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon freshly ground pepper
Instructions
  1. Cook all ingredients in a 3-quart saucepan over medium heat 6 to 8 minutes or until mixture is thoroughly heated, stirring often. Serve immediately, or serve chilled.
