Vegetable Chowder

Mmm, there's nothing quite as comforting as a warm, rich chowder. And this one's packed with healthy vegetables, so we feel good about that, too!

What You'll Need:
  • 3 quarts milk
  • 1 (10-ounce) package frozen chopped broccoli
  • 1 (10-ounce) package frozen corn
  • 1 (16-ounce) package frozen sliced carrots
  • 1 (10-ounce) package frozen peas
  • 1 tablespoon dried basil
  • 1 teaspoon white pepper
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 2 cups instant mashed potato buds or flakes
What To Do:
  1. In a large pot, combine all ingredients except potato buds. Bring to a boil, stirring occasionally.
     
  2. Turn heat to low, stir in potato buds, and cook 3 to 4 minutes, stirring occasionally. Serve immediately.
Options

You can add practically any other frozen veggies you'd like in here. I often add an extra package of broccoli and a package of frozen lima beans along with the others. And add more seasoning, less seasoning, or your favorite seasoning to make it your own!

I usually give most recipes several start. But not this one. I was so disappointed at the flavor....or lack of flavor! It was very bland. I did not realize it was going to make such a huge pot of soup. I did not have any white pepper, so I use black pepper. BIG mistake! It certainly had a lot of "heat" to it. I had to keep adding more and more salt. This is unusual for me, because I am not a salt lover. I put a little shredded Cheddar in my bowl of soup. Tonight, to give it more flavor, I added chopped cooked ham. It really helped. I hate giving this a negative review, but it just could not be helped. I love Mr. Food's recipes and will continue to make them.

This wasn't bad but not as good as I was expecting. Wish I had cut the recipe in half because it does make a lot of soup. I added the seasonings it called for and I still had to add a lot more seasonings for taste which helped a lot. Of course, adding butter and cheese to it made a big difference too. May or may not make it again.

yum.. for extra richness I would sub in a can of evaporated milk too.. makes soup extra creamy..

I will be trying this but with fresh not frozen vegetables.

It sounds delicious, but it certainly going to be a potful for 2 people. I am glad we love soup!!!
