Braised Mediterranean Beef

Sounds fancy, doesn't it? Our Braised Mediterranean Beef is a one-pot recipe that makes short work of an elegant-tasting dish!

Serves: 4

Cooking Time: 2 hr 30 min

Ingredients
  • 1/3 cup vegetable oil
  • 3 pounds boneless beef chuck roast, cut into 1-inch cubes
  • 2 large onions, chopped
  • 4 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 (28-ounce) cans Italian-style stewed tomatoes, chopped, juice reserved
  • 1 cup dry white wine
  • 1 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
Instructions
  1. In a large soup pot, heat oil over medium-high heat and brown beef on all sides.
     
  2. Add onions, celery, and garlic, and saute until vegetables are tender.
     
  3. Add remaining ingredients and bring to a boil.
     
  4. Reduce heat to low, cover, and simmer 1-1/2 to 2 hours, or until beef is fork-tender.

Note

For rosemary-flavored beef, substitute dried rosemary for the oregano.
