Ingredients
- 1/3
cup vegetable oil
- 3 pounds boneless beef chuck roast, cut into 1-inch cubes
- 2 large onions, chopped
- 4 celery stalks, diced
- 4 garlic cloves, minced
- 2 (28-ounce) cans Italian-style stewed tomatoes, chopped, juice reserved
- 1 cup dry white wine
- 1 cup chopped fresh parsley
- 1 teaspoon dried oregano
- 1 1/2
teaspoons salt
- 1 teaspoon black pepper
Instructions
- In a large soup pot, heat oil over medium-high heat and brown beef on all sides.
- Add onions, celery, and garlic, and saute until vegetables are tender.
- Add remaining ingredients and bring to a boil.
- Reduce heat to low, cover, and simmer 1-1/2 to 2 hours, or until beef is fork-tender.
Note
For rosemary-flavored beef, substitute dried rosemary for the oregano.
