The next time you're wondering how you can cook with this veggie, remember that we've got this Autumn Acorn Squash recipe that's perfect for such occasions! What You'll Need

  • 2 acorn squash, cut in half lengthwise
  • 1 cup maple or pancake syrup
  • 1/4 cup jalapeno pepper jelly
  • 1 tablespoon butter, melted
  • 1 teaspoon ground cinnamon or nutmeg

What to Do

  1. Preheat oven to 400 degrees F. In a 9- x 13-inch baking dish, place squash cut side up.
     
  2. In a medium bowl, combine maple syrup, jelly, butter, and cinnamon. Coat cut side of squash evenly with syrup mixture.
     
  3. Bake 1 hour, basting occasionally, or until squash is fork-tender and starts to brown around the edges.
     

Notes

Be careful when you check the squash and remove it from the oven, because the syrup is very hot!
