Autumn Acorn Squash

Cinnamon, maple syrup, and acorn squash...what a natural combination! You'll "fall" in love with its simple richness.

Serves: 4

Cooking Time: 1 hr

Ingredients
  • 2 acorn squash, cut in half lengthwise
  • 1 cup maple or pancake syrup
  • 1 tablespoon butter, melted
  • 1 teaspoon ground cinnamon or nutmeg
Instructions
  1. Preheat the oven to 400°F. Place the cut squash in a 9" x 13" baking dish, cut side up.

  2. In a medium-sized bowl, combine the maple syrup, butter, and cinnamon. Coat the cut half of the squash evenly with the syrup mixture. Bake for 1 hour, basting occasionally, or until the squash is fork tender and starts to brown around the edges.

Notes

Be careful when you check the squash and remove it from the oven, because the syrup is very hot and can burn you!
