Autumn Creamed Spinach

This rich and creamy dish is so tasty that it turns spinach haters into spinach lovers. Trust me...I've seen it happen right in front of my eyes!

Serves: 4

Preparation Time: 2 min

Cooking Time: 3 min

Ingredients
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and well drained
  • 1 cup (1/2 pint) heavy cream
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Instructions
  1. Melt the butter in a large skillet over medium heat; stir in the flour until combined and golden.

  2. Add the remaining ingredients; mix well and cook for 3 to 5 minutes, or until heated through.

Notes

Two 10-ounce packages of fresh spinach can also be used; just chop and boil it until tender, then drain well and proceed as above.
