Creamy Spinach Bake

Ingredients
  • 5 tablespoons butter or margarine
  • 3 cups Kellogg's Corn Flakes cereal, crushed to 1-1/2 cups, divided
  • 3 tablespoons chopped onion
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/4 cups skim milk
  • 1 cup (4 ounces) shredded Swiss cheese
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 2 eggs, well beaten
Instructions
  1. Preheat the oven to 350 degrees F.

  2. In a large saucepan, melt the butter over low heat. Remove 2 tablespoons to a large bowl; mix and set aside for topping. Stir the onion, flour, and salt into the butter remaining in the pan. Cook for about 1 minute, stirring constantly.

  3. Gradually add the milk, stirring until smooth. Increase the heat to medium and cook until the mixture comes to a boil, stirring constantly. Remove from the heat.

  4. Add the cheese, stirring until slightly melted. Stir in the spinach, eggs, and 3/4 cup cereal.

  5. Spread the mixture in a 1-quart casserole dish. Sprinkle the reserved cereal topping over the spinach mixture.

  6. Bake for about 25 minutes, or until heated through.
