Grilled Summer Veggies

Got a grill basket for your barbecue grill? Use it or pick one up and get your gang to eat their veggies with our recipe for Grilled Summer Veggies. The unbeatable smoky cookout flavors will turn those finicky eaters into veggie lovers.

What You'll Need:
  • 1 red bell pepper, seeded and cut into 1-inch strips
  • 1 green bell pepper, seeded and cut into 1-inch strips
  • 2 yellow squash, cut into sticks
  • 1 zucchini, cut into sticks
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
What To Do:
  1. Preheat grill to high heat.
     
  2. In a large bowl, combine all ingredients; mix well and place in a grill basket.
     
  3. Grill vegetables 5 to 6 minutes, or until lightly browned but still crisp.

I fixed this last night for supper while I was grilling pork chops. We really liked it and will have it again. I also tossed in two small banana peppers (from my garden) and a "Fooled You Jalapeno pepper," also from my garden. This recipe is a "keeper."

When I roast vegetables in the oven I use the bottom rack, set the oven at 425 and cook for about 15 minutes or until desired tenderness. In the winter months I will combine cauliflower & broccoli heads, onions quartered, and mini carrots split lengthwise. I have also used italian salad dressing with a little extra olive oil, which gives a nice variation to the taste.

Would love to make this during the winter months, so how long would you cook this in the oven and at what temperature? Thank you, love this site.
