Herb Roasted Corn on the Cob

No matter if you roast it in the oven or on the grill, Herb Roasted Corn on the Cob gives you a new way to jazz up an old favorite while adding fiber to your diet. One taste and you'll never put plain butter on your ears again.

Ingredients
  • 2 tablespoons corn oil or stick margarine, melted
  • 1 garlic clove, minced
  • 1 scallion (green onion), finely chopped
  • 1 teaspoon chopped fresh dillweed
  • 1/8 teaspoon black pepper
  • 4 ears fresh corn on the cob, husked
Instructions
  1. Preheat oven to 425 degrees F. In a small bowl, combine margarine, garlic, scallion, dill, and black pepper; mix well.
     
  2. Place each ear of corn in a separate piece of aluminum foil and brush with butter mixture. Wrap each and seal completely then place on a rimmed baking sheet.
     
  3. Roast corn 20 to 25 minutes, or until kernels are tender. Carefully open foil and remove corn. Serve immediately.
