Lovin' Onions

If you've never eaten onions baked like this...boy, are you in for a treat! You're gonna love 'em (and you'll love how easy they are)!

What You'll Need:
  • 1 tablespoon butter
  • 7 onions, coarsely chopped (about 7 cups)
  • 1/2 cup self-rising flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/4 cups (5 ounces) shredded Cheddar cheese, divided
  • 1 1/4 cups (5 ounces) shredded Monterey jack cheese, divided
  • 1 tablespoon jarred jalapeno peppers, drained and chopped (optional)
What To Do:
  1. Preheat oven to 350 degrees F. Coat a 1-1/2-quart casserole with cooking spray.
  2. In a large skillet over medium-high heat, melt butter. Add onions and sauté about 10 minutes, or until softened.
  3. Meanwhile, in a medium bowl, combine flour, salt, and pepper. Add 1 cup of each cheese; mix well. Add jalapeño peppers, if desired, and cooked onions; mix well. Pour into prepared casserole dish. Combine remaining cheese and sprinkle evenly over onion mixture.
  4.  Bake 30 minutes, or until cheese is melted and bubbly.

So many ways to enjoy onions! One of our favorites (and everyone else's too, it seems) is crispy Onion Rings!

So good I used fresh jalapenos

To those that have asked "why self rising flour" without an answer... I think it is used to make it puff up a bit like biscuit dough.

What is the purpose of self-rising flour as opposed to regular flour in this recipe? It does not have a crust or topping that needs to rise. It seems from the photo that the flour is used just to thicken the onion-cheese mixture. Is there something special? Thank you, test kitchen team.

Hi there! Self-rising flour is used as a thickening agent in this recipe, but it can also give it a little rise and a lighter texture. If you prefer, you can use all-purpose flour in this recipe, and it will work just as well. - Enjoy!

Don;t have self rising. Can I use baking powder?

No self rising flour? No problem! :) Just use 1 tsp baking powder and tsp salt in 1 cup of all purpose flour to sub for self rising.

sounds great, but I need to use bell pepper instead of jalapeno.

You can get jarred jalapenos in 'mild' as well as 'hot'. They have the peppery flavor without the heat.

I just made this for dinner along with a turkey breast. The onions get very mellow, and it is really quite good. I added one thinly sliced zucchini. I had fresh jalapeos so I used one chopped jalapeo. I will make this recipe again. Tasty!!

Can regular flour be used?

Does it have to be Self-rising flour? I never use it and I don't need a whole bag just for one recipe. .

If you don't have self-rising flour on hand, here is how you can make your own. Mix 1 cup all-purpose flour, 1-1/2 teaspoons baking powder and 1/2 teaspoon salt. Now you don't have to buy a separate bag!

Did ya'll know that onions help keep your cholesterol low?

Made for Thanksgiving but was not a big hit as a side dish. However, later rewarmed and served with blue corn ships and everyone loved it! Will make again as an appetizer. (Used whole jalapeno in recipe).

Made them for our family Thanksgiving dinner. I did not use the jalapeno peppers. They were a big hit. Will use this recipe again, very simple.
