Spaghetti Squash

Spaghetti squash has a chameleon quality to it, 'cause it cooks up with the same taste as our favorite pasta dishes. Our easy-to-make spaghetti squash recipe will have even your finicky veggie eaters cleaning their plates.

What You'll Need:
  • 1 medium spaghetti squash
  • 4 tablespoons butter
  • 1 teaspoon chopped fresh garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons sliced fresh basil
What To Do:
  1. Fill a soup pot with one inch of water and place whole squash in water. Bring to a boil over high heat, cover, and cook 20 to 30 minutes, or until tender when pierced with a knife. Remove squash to a cutting board and allow to cool slightly.
     
  2. Cut squash in half lengthwise then use a spoon to remove and discard seeds. Scrape inside of squash with a fork, shredding into noodle-like strands.
     
  3. Place shredded squash in a large skillet and heat over high heat 2 to 4 minutes to eliminate excess water. Add remaining ingredients except basil and cook over medium heat 5 to 7 minutes, or until heated through. Stir in basil and serve.
     
Notes

I had never heard of this vegetable and had to try it. It really was easy to boil in a large pan as stated. It lasted a long time in the fridge and I used it to mix with my other vegetables. It was really good! I can't say that it tasted anything like spaghetti though.

Big hit for my family!

This is exactly the way I fix it, and it is amazingly good! Only omission is the basil, as I don't always have it fresh. I have used marinara sauce on my squash as well. GOOD STUFF!

The length of time to cook in th microwave depends on the size of the squash.. and the power of your microwave. I start at 5 minutes and keep checking until it reaches softness. You can add more time if it's underdone but can't tack it back if overcooked.

i also enjoy spgti sqsh with alfredo sauce & diced turkey or chicken

I find that cutting the raw squash in half and removing the seeds before microwaving is an easier way to prepare the spaghetti squash

How long did you cook in the microwave.

I remove the seeds before cooking as well.
