Very Merry Vegetable Medley

Instead of serving the old ho-hum mushy veggies, you can whip up this colorful sauteed veggie medley. Your gang will applaud you for being so creative. An excellent addition when brightening up your dinner table spread, you'll look like you've hired a pro!

What You'll Need

  • 3 tablespoons butter
  • 3 bell peppers (1 each red, green, and yellow), cut into thin strips
  • 1 onion, thinly sliced
  • 1 garlic clove, minced
  • 1 large zucchini, cut into thin strips
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Melt butter in a skillet over medium-high heat.
     
  2. Add bell peppers, onion, and garlic and saute 4 to 5 minutes, or until crisp-tender.
     
  3. Add remaining ingredients and saute 2 to 3 minutes, or until vegetables are tender. Serve immediately.

I absolutely loved this. I'm putting leftovers away and I'm still picking at it. Definitely a keeper.

I make this all the time using various kinds of veggies, even eggplant! and if I have any cooked chicken, Turkey or ham to add to it, I serve it with spagetti or rice, it is a real winner with my husband! I believe I could serve it to him 3 or 4 nights a week, he loves it. try it you'll like it. a nice way to use pieces of veggies that arent enough for an exrtra serving. I do like to use Olive oil instead of the butter. or 1/2 and 1/2 Olive and butter.

I make this year round. Sometimes add carrots and or yellow summer squash. My family loves it. Also serve with a spagetti dinner.
