Zucchini and Tomato Bake

Quality time?! All I hear from everybody today is, "There's no time!" But maybe, just maybe, if we had some old-fashioned-tasting comfort foods that were today, easy to make, we'd tempt that gang of ours to cut short all those extra activities- maybe even once a week. And then we could sit down at the table and enjoy a quality meal and quality time together.

Cooking Time: 35 min

Ingredients
  • 3 medium zucchini, cut into ¼-inch-thick slices
  • 1 can (28 ounces) diced tomatoes, drained
  • 1 medium onion, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
Instructions
  1. Preheat the oven to 400°F. Coat an 8-inch square baking dish with nonstick cooking spray.

  2. In a large bowl, combine all the ingredients except the Parmesan cheese; mix well.

  3. Spoon into the baking dish and sprinkle with the Parmesan cheese. Bake for 30 to 35 minutes, or until the zucchini is tender. Serve immediately.
