When we were in Ireland, we had the opportunity to visit the birthplace of Irish coffee at the Foynes Flying Boat Museum. We brought back the secret tips so you can make it at home using their age-old method.

The History of Irish Coffee

In 1942, in County Limerick, Ireland, Brenda O'Regan opened a restaurant and coffee shop in the Foynes terminal building and employed a chef named Joe Sheridan. It was not long before Joe realized that the passengers waiting in the terminal in cold and rainy weather needed something to make their coffee a bit stronger. Thus, Irish Coffee was born.

Today, Foynes celebrates this wonderful drink year-round at the museum, as well as at their annual Irish Coffee Festival. If you are a coffee lover and are visiting the beautiful country of Ireland, plan on visiting the museum to enjoy a glass of authentic Irish coffee and discover the history behind it.


Irish Coffee

1 teaspoon light brown sugar
6 ounces freshly brewed coffee
2 tablespoons Irish whiskey
Lightly whipped heavy cream
  1. Place brown sugar in a coffee mug or heat-proof glass.
  2. Fill mug 3/4-full with hot coffee; stir well to melt sugar. Stir in whiskey.
  3. Carefully pour the lightly whipped cream over coffee so it floats on top of coffee (see Note.)
