Baking Tips that Take the Cake
As we get into our big baking season, it's time to check out a few of the most important ones. We all know that baking is part art and part science – and we can be as creative as we'd like, as long as we use our tools correctly. Here are my most important cake-baking tips:
  1. The number one tip for all oven baking is to preheat. We'll get our best results in an oven that's at the correct temperature to start with. Otherwise, baked goods may not rise properly – and items will take longer to bake, too.
  2. Check your oven temperature once a year, following the manufacturer's guidelines, or have a professional do it.
  3. Choose the right pan – the wrong one can cause a cake to be flat and sunken or rise to a peak and then fall. If you're in a hurry, batter poured into shallow pans like round or square baking pans might be a better choice than a tube or Bundt pan, or you could even choose to bake individual items using muffin or cupcake tins.
  4. When it comes to greasing, we can use shortening or a baking spray. We can dust pans with flour – or, if we're baking something chocolate, we can dust the pan with unsweetened cocoa to blend the color right in. And never grease the pan for angel food cakes – greasing would actually cause the batter to slip down the sides of the pan and not rise as high.
