What's the best way to select fresh fish at the supermarket fish counter? Mr. Food offers basic tips to safely and properly choose, bring home, and handle the freshest, highest-quality fish to lure the gang to the table.
How To Select & Handle Fresh Fish
  • Keep it Cold: At the fish counter, look for fish that are displayed on a thick bed of fresh, not melting, ice.
  • Bellies Down: Fresh fish should be arranged with the bellies down, so the melting ice drains away from them.
  • Firm to the touch: Look for fresh fish that has firm, shiny flesh that bounces back when touched gently.
  • On Odor: Never accept any fish that has an odd or ammonia-like odor.
  • Proper Storage: It's best to cook fresh fish the same day it is purchased. Otherwise, store it in the coldest part of the refrigerator for no more than a day; or freeze it until ready to cook.
  • Cook it right: When cooking fish, make sure it is white and flaky before removing it from the heat.
  • 10 minutes per Inch: The rule of thumb for perfectly cooked fish is to cook it 10 minutes per inch of thickness at its thickest point.
