When you're craving the cheesy-fried goodness of a popper, but want something a little different from the average jalapeno popper, make these Cheesy Crab Poppers. They're crispy, cheesy, and have just a light kick to 'em, making them the perfect party appetizer.

What You'll Need

  • 1 (8-1/2-ounce) package corn muffin mix
  • 1 cup Panko bread crumbs
  • 1 cup shredded sharp cheddar cheese
  • 4 ounces cream cheese, softened
  • 1 stick butter, melted
  • 1 egg, lightly beaten
  • 1/4 cup milk
  • 2 scallions, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 (10-ounce) container lump crab meat, drained well
  • 2 cups vegetable oil

What to Do

  1. In a large bowl, combine corn muffin mix, bread crumbs, cheddar cheese, cream cheese, butter, egg, milk, scallions, salt and cayenne pepper; mix well. Gently stir in crab meat until combined. Form mixture into 1-1/2-inch balls.
  2. In a deep skillet or soup pot over medium-high heat, heat oil until hot. Add several crab balls to oil, making sure not to overcrowd. Cook 4 to 5 minutes, or until golden brown, stirring occasionally. Place on paper towel-lined plate to drain. Repeat with remaining crab balls. Serve warm.

Notes

Serve with your favorite dipping sauce.

How fun this is...it's kinda like a deluxe version of a traditional hushpuppy minus the onion. (which might also work in this recipe) Crab goes so well with cream cheese but I've never thought to have it with cheddar as well...I'll definitely have to give it a try because I really love everything about cheddar and the sharper it is, the better in my book! You can probably even make little patties out of the mixture and garnish them with a salad or coleslaw to lighten it up a touch.

can you bake them

Hi there! These can baked at 350 degrees for 15 -20 minutes or until golden and heated in center. Enjoy! :)

Can imitation crab be used. Real crab is so expensive.

Imitation crab can definitely be used in place of real crab. Enjoy and Happy New Year! :)

Can these be made ahead and reheated in oven?

Hi there! Yes, these can be made ahead and reheated in the oven. Enjoy!

Would have been a bonus if they would've included the recipe for the dip "they" used.

Hi there! In this recipe, we used Joe's Stone Crab Mustard Sauce for dipping. :) You can find that recipe here: http://www.mrfood.com/Relishes-Sauces-Seasonings/Joes-Stone-Crab-Mustard-Sauce-3389 Enjoy!
