Cranberry Dream Bars

Creamy Cranberry Dream Bars are a delightful treat. They can be served as a fancy dessert or a simple kids' snack.

What You'll Need

  • 2 1/2 cups all-purpose flour, divided
  • 3/4 cup confectioners' sugar
  • 1 cup (2 sticks) butter, softened
  • 4 eggs
  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon salt
  • 1 (12-ounce) bag or 3 cups fresh cranberries, coarsely chopped

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. In a large bowl, combine 2 cups flour, the confectioners' sugar, and butter. Mix with a fork or your hands until mixture starts to hold together.
     
  3. Press into bottom of a 10- x 15-inch jelly roll pan. Bake 15 minutes then remove from the oven.
     
  4. Meanwhile, in another large bowl, combine the eggs, granulated sugar, salt, and remaining 1/2 cup flour; mix with a wooden spoon until smooth. Fold in chopped cranberries. Spread mixture over hot crust, and bake 32 to 35 minutes, or until top is light golden.
     
  5. Remove from oven; let cool then cut into bars.

if you use dried cranberries instead of fresh what is the ratio vs fresh?

Hi there! The Test Kitchen has not tried this recipe with dried cranberries, but estimates about 1-1/2 to 1-3/4 cups cranberries. Enjoy!

I made these today and followed the instructions without any changes. Very yummy! Will definately make them again.

Can't get fresh? Just use frozen but thaw and drain on paper towels. I make these gluten free in my Texas bakery with good reviews!! For a tasty change, add 1 cream cheese and 1/2c sugar to berry mix. For a fancier version, we drizzle with melted chocolate!! Good Luck, JKunz,PhD

If its got cranberries in it it has to be good

sometime we can not get fresh crnberrys what can we ues???

How about using dried, for example, Cranraisins? Sam's Club or Costco has them constantly, or just dried cranberries. I live in Mexico we never get fresh or frozen cranberries either, so I always buy the dried. They work great in all recipes for me.

This recipe calls for bagged, FRESH CRANBERRIES... NOT canned whole or smooth cranberry sauce. Plus, using the entire bag (as it states in the recipe), there will be NO leftovers!!

This looks like a great bar cookie recipe, but I would like to know what to do with the rest of the canned cranberry jelly leftover. If you have to go buy a bag of frozen cranberries, That IS NOT a leftover. I always have at least 1/2 can of cranberry jelly(?) left. I do use the kind with whole cranberries in it. Help please.

A few nights ago I made a pork loin and cut a slit in it and filled it with smooth cranberry sauce...very yummy!
