Firehouse Pot Roast

We visited a local firehouse to find out what one of their favorite dishes is and came out with a chuck roast recipe that's so good, your whole gang is going to be fired up! Our Firehouse Pot Roast is slow-cooked and topped with an unforgettably good, homemade barbecue sauce that'll leave you smiling all dinner long.
What You'll Need
- 1 tablespoon vegetable oil
- 1 (3-1/2- to 4-1/2-pound) chuck roast
- 2 large onions, cut in half and thinly sliced
- 2 cups barbecue sauce
- 1 cup beef broth
- 3 cloves garlic, minced
- 2 tablespoons hot sauce
- 1 tablespoon chili powder
- 1/4 cup water
What to Do
- Preheat oven to 350 degrees F. In a Dutch oven over high heat, heat oil; brown chuck roast on both sides. Place onions on top and around roast.
- In a large bowl, combine remaining ingredients. Mix well, pour over roast, and cover.
- Roast 3 to 3-1/2 hours, or until beef is fork-tender.
- Remove roast to a cutting board, cut into chunks, and serve topped with sauce.
Notes
- Serve with mashed potatoes and baby carrots.
- No Dutch oven? No worries! Just use a 9- x 13-inch baking dish instead.
- And let's not leave any of that delicious BBQ sauce behind--mashed potatoes, anyone?

Hi there! To make this in a pressure cooker, just leave out the 1/4 cup of water. Everything else will work just fine. :)

The homemade bbq sauce specified in the recipe is 2 cups canned bbq sauce, 1 c beef broth, 3 cloves garlic, 2T hot sauce, 1T chilli powder and 1/4 C water. Easy peasy.

Yes, just cook on LOW for 7 to 9 hours, or until your roast is fork tender. Enjoy!

Cheez! I still don't get it! Are the remaining ingredients supposed to be the BBQ sauce? It doesn't work out to be 2 cups does it. So, what gives. ?? Maybe someone at Mr. Food can reread the recipe and try to figure it out. I figured they also had the 2 cups of some BBQ sauce and then the rest is added, or there wouldn't be much of any "gravy" to the recipe.

Hello - Yes, everything is correct. The remaining ingredients make up the semi-homemade barbecue sauce. There is just the right amount of "gravy" for the roast. :) Enjoy!

The recipe clearly states to "combine remaining ingredients" which are the makings of your homemade bbq sauce. Easey peasy unless you failed Grade 3. Peace =D

The homemade b-b-q sauce is the jarred sauce enhanced with onions, garlic, beef broth, hot sauce, and chili powder. Sounds right to me.
