The next time you make a sandwich, a hamburger, or any other meal that involves slices of bread, try it on Cloud Bread. Cloud Bread is a totally gluten-free, low-carb, low-calorie, and low-fat bread alternative. It's a healthier choice that looks like a fluffy cloud and tastes so good!

What You'll Need:
  • 3 eggs, separated
  • 3 tablespoons cream cheese, softened
  • 1 teaspoon sugar
  • 1/4 teaspoon cream of tartar
What To Do:
  1. Preheat oven to 300 degrees F. Coat 2 baking sheets with cooking spray.
  2. In a small bowl, mix egg yolks, cream cheese, and sugar until smooth.
  3. In a medium bowl, combine cream of tartar with egg whites; beat with an electric mixer on high speed until fluffy and stiff peaks form. Gently fold egg yolk mixture into egg white mixture until well combined. Spoon mixture into 10 even rounds on baking sheets.
  4. Bake 25 to 30 minutes, or until golden brown. Let cool 5 minutes, then remove to a wire rack to cool completely.
Notes
  • Store in an airtight container.
  • For firmer bread, allow it to sit overnight.

Is there any way you could include nutrition info with the recipes? My wife is diabetic and I don't want to overload her on crabs if I can help it.

This is not very good, certainly not sandwich worthy, tidbits for snacking at best. The pictures look better than the product, whether using sugar or Splenda, it isn't that great, sorry.

To the Test Kitchen Team There is something wrong with this video, I can hear it but the video does not come on. There is no video window that pops up like usual.

I haven't made this version yet but I suggest a packet of artificial sweetener instead of sugar. Those carbs are precious and not to be wasted when there is a substitute.

Made these today, and they were just like the picture. We saw them on the Mr Food moment on our local news show. They were firmer than I expected,and that's good. Great for sandwiches.

Sugar? Is there something else you can use as a substitute? Doesn't the sugar kick up the carb count?

Use a sweetener - I saw the same "bread" on another site that's what they used.

I started making this recipe from Dr. Atkins book back in the 1970's. It uses a packet of artificial sweetener (no sugar) and I find you can use cream cheese in place of cottage cheese. It's great for sandwiches!

the recipe says to use cream cheese not cottage cheese

As other readers have suggested, you can use a sugar substitute in place of the sugar in this recipe. Enjoy!

Hello - Could you please give us more information as to what browser you're using and what exactly is happening? We have tested playback of the video on several computers and browsers without finding any problems, so we're not sure why the video may not be working for you. Is this happening with just this recipe video or with all recipe videos on our site? Thank you
