Rocky Road Pudding Cake

This heavenly decadent slow cooker version of Rocky Road Pudding Cake will be ready and waiting for you to enjoy ooey, gooey warm after dinner. Our Test Kitchen team loves to serve it with a scoop of vanilla ice cream for a taste bud pleasing contrast of hot and cold.
What You'll Need
- 1/2 cup (1 stick) butter, melted
- 1 1/3 cups sugar
- 1 cup all-purpose flour
- 4 large eggs, lightly beaten
- 1/3 cup unsweetened cocoa
- 1/2 cup chopped pecans
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup miniature marshmallows
- Vanilla ice cream (optional)
What to Do
- In a large bowl, mix together butter, sugar, flour, eggs, cocoa, pecans, cinnamon, salt, and vanilla. Pour into a 3-1/2-quart round slow cooker that's been coated with cooking spray.
- Cover and cook on low setting 1-1/2 hours, or until set around edges but soft in center. Turn off slow cooker. Sprinkle with marshmallows; let stand, covered, 15 minutes. Serve warm with ice cream, if desired.
Notes
The center of this cake is supposed to be a little jiggly, so don't cook any longer. You'll have a pudding cake consistency when finished.

Can I substitute marshmallow creme for the mini marshmallows?

After increasing the cooking time an hour it turned out nicely. Family members were divided on the cinnamon, probably will decrease it a bit next time. That is a matter of personal taste. It is more of a pudding than a cake. Obviously wasn't done in the time stated. We cooked it a bit long, it takes between 2 and 3 hours depending on how gooey you want it. Slow cookers vary in heat which should be taken into consideration. Found an identical recipe on line minus the cinnamon and gauged by their cooking instructions. Will make again with adjustments in time.

This is a very very rich dessert.I cooked it longer the second time as it was more pudding that cake.It doesn't take much to fill you up.A little goes a long way...It is very good and I would make it again.I used walnuts instead of pecans......

This was fantastic! I cooked it in the slow cooker for a half hour longer since gooey cakes freak out my boyfriend, so it was only a little pudding-y. And I used dry-roasted peanuts instead of pecans. Would have been super with vanilla ice cream had I had any. Served this during the Super Bowl and it was nice to use the crock pot so something else could be in the oven. Thanks, Mr. Food!

I just finished eating this and IT WAS WONDERFUL.... My husband and son thought so too. just AMAZING stuff we used ice cream and I cooked down some strawberries to put on it also.

Made this tonight for desert - Yummy ! I put it in a 9x9 pan and baked it for 325 for 35 minutes - then put the marshmellows on top and back in the oven for about 3 minutes :-)

I would love to try this recipe but I do not have a 31/2 quart slow cooker and I don't think I will buy one that small for this recipe. Can it be done in a larger slow cooker?
