Corn chips aren't just for snacking! Proof positive of that is how they add tasty crunch as the topper for our homestyle Corn Chip Chicken Casserole. This one goes together quick and tastes like you fussed all day!

What You'll Need

  • 2 cups diced cooked chicken
  • 1 cup cooked white rice
  • 1 (14-1/2-ounce) can diced tomatoes, drained
  • 1 (10-3/4-ounce) can condensed cream of chicken soup
  • 1 cup frozen corn
  • 1 (4.5-ounce) can chopped green chilies, undrained
  • 2 teaspoons taco seasoning mix
  • 1 1/2 cup shredded Cheddar cheese, divided
  • 1 cup corn chips, coarsely broken

What to Do

  1. Preheat oven to 350 degrees F. Coat a 2-quart baking dish with cooking spray.
  2. In a large bowl, combine all ingredients except corn chips and 1/2 cup cheese; mix well. Spoon into prepared baking dish. Sprinkle corn chips over top.
  3. Bake 30 to 35 minutes. Sprinkle with remaining 1/2 cup cheese and bake 5 additional minutes, or until bubbly and cheese is melted.

Huh, I've never cooked with corn chips, but I feel like this would be super tasty!

Being from New Mexico, I use fresh roasted green chili's, all in all, it's a good variation on our Frito's pie.

I've been making a vegetarian version of corn chip casserole since 1983. It's a dish you can adapt to use up leftovers, which my daughter does. The secret is not to make it too moist, because I like a good layer of corn chips on the bottom also, and then sprinkle grated cheese over the bottom layer. Sure they become soggy but they still taste good.

I was disappointed...this sounded and looked much better than it actually tasted. It was fair enough; certainly edible, but the flavors didn't really mesh as well as I had anticipated. It was okay for one meal, but definitely not a keeper.

What a unique recipe!

This was really a very tasty and very easy recipe. I used precooked chicken from Chipotle and used about a teaspoon of Penzey's Chicken Taco Seasoning as the chicken is quite spicy. My husband really enjoyed this too. Great way to use leftover chicken and rice.

A snap to make and a delicious supper with leftovers for lunches!

This corn chip casserole is excellent. Took it to church potluck and everyone loved it.
