We all have those nights when making dinner seems impossible. After a long day, you may not want to spend a lot of time in the kitchen. That's when our Everyday Chicken Casserole comes in! This all-in-one chicken casserole recipe can be made the night before and cooked right before everyone gets home.

What You'll Need

  • 1 (10-3/4-ounce) can cream of chicken soup, undiluted
  • 1/2 cup mayonnaise
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups cooked rice
  • 1/2 cup chopped celery
  • 1 cup frozen peas, thawed
  • 1 1/2 cups diced cooked rotisserie chicken
  • 1 cup coarsely crumbled potato chips

What to Do

  1. Preheat oven to 375 degrees F. Coat a 3-quart casserole dish with cooking spray.
  2. In a large bowl, combine soup, mayonnaise, onion powder, salt, and pepper; mix well. Add rice, celery, peas, and chicken; mix until well combined. Spoon mixture into casserole dish and top with potato chips.
  3. Bake 35 to 40 minutes, or until heat through and golden brown.

I haven't tried this yet but I know my Husband would love it...

Very good. Used cream of mushroom soup cuz that's what came out of the pantry first, red bhutan rice and drained canned peas. I found it was a tad bland so I added about 2 tsp of Toney's seasoning and some garlic granules. Also added about 1/4 cup diced onions (didn't have any onion powder). White rice and frozen peas would make it prettier but is tasted great.

This looks good, but I was wondering what the garnishes were at the very end, on top of the baking dish..? Looks like a sliced red pepper or tomato (something red, sliced) and some kind of fresh herb sprig, possibly rosemary?

This is a good casserole to keep handy especially for leftover chicken and turkey. I've subbed in yogurt or sour cream for the mayo and quickly did some instant rice for the regular, no potato chips? fried onions or bread crumbs work equally well, espaecially if you toss the bread crumbs with melted butter and parmesan.

Yes, exactly! I need to make two at a time so one is in the freezer, because I just can't cook every day! the crushed potato chips on top don't sound too appealing, but then corn flakes don't either, and there's a really good potato casserole with sour cream with them on top.
