Bite Sized Chocolate Cheesecake

If cheesecake is your weakness, you won't be able to resist these bite-sized mini cheesecakes that are so rich and yummy they'll satisfy your craving without overdoing it!
What You'll Need
- 24 vanilla wafer cookies
- 3 (8-ounce) packages cream cheese, softened
- 1/2 cup unsweetened cocoa
- 1/4 cup (1/2 stick) butter, melted
- 2 teaspoons vanilla extract
- 1 (14-ounce) can sweetened condensed milk
- 3 eggs
What to Do
- Preheat oven to 300 degrees F.
- Line 24 regular-sized muffin cups with paper baking cups. Place a vanilla wafer in the bottom of each paper cup.
- In a large bowl, with an electric beater on medium speed, beat cream cheese until creamy. Add cocoa, butter, and vanilla, beating until well blended.
- Slowly add sweetened condensed milk then the eggs, until thoroughly mixed. Spoon into the baking cups.
- Bake 30 to 35 minutes, or until set. Cool completely then refrigerate 2 hours or until ready to serve.
Notes

These sound so yummy. I love these quick to prepare cheesecakes. I know they are not the real thing but they are a good stand in for me. I also love when these recipes provide you the opportunity to make them in single size servings. These are great to serve at parties because guests can help themselves.

These are bite sized bits of heaven if you ask me. I made these and I should have taken a picture. I did not know that they would fly off the platter like they did. It just so happened that my sons had friends over and who knew that boys alike chocolate like that?

@ little miss 0915...I thought the same, but they have reduced fat sweetened condensed milk as well as cream cheese. I always use reduced fat and nobody ever notices...they are so good.

Sounds delicious but might try substituting low fat cream cheese as well low fat sweetened condensed milk. Might work to cut the calories and fat content a bit.

A great topping I use is Nutri-whip - it is non dairy based, tastes just like whipped cream, is not too sweet and is my choice especially when food is out for buffet. Our family and extended aunts, uncles and cousins have met every Good Friday for over 40 years in a community centre for lunch and we all bring pot luck. This will be my next contribution - looks yummy!

Why not try cherry pie filling, that is always great when chilled, or you might add caramel syrup mixed with chopped nuts and a dollop of whipped cream on top, any fruit pie filling, Blueberry, pineapple, strawberry or what ever you prefer.

Take favorite instant pudding mix and one tub dream whip and mix together. The pudding mix stabliizes the dream whip and makes a great topping for these cheesecakes and your regular cake mixes.
