Jerk Style Chicken

A traditional Kwanzaa dish, Jerk-Style Chicken is packed with flavor that your family is sure to celebrate all year long.

What You'll Need:
  • 1 (3- to 3-1/2 pound) chicken, cut into 8 pieces
  • 1 red onion, thinly sliced
  • 1/4 cup soy sauce
  • 3 tablespoons vegetable oil
  • 2 tablespoons rum
  • 1 tablespoon dried jerk seasoning
What To Do:
  1. Place chicken in a large resealable plastic  bag. Add remaining ingredients, seal, and turn bag to coat evenly.
  2. Place in refrigerator at least 4 hours or overnight, turning occasionally.
  3. Preheat oven to 350 degrees F. Place chicken and onion in a 9- x 13-inch baking dish; discard any remaining marinade.
  4. Bake 55 to 60 minutes, or until no pink remains and juices run clear.

Followed exactly except added green pepper strips and sprinkled with a little more jerk seasoning when putting in oven. Good but we thought it needed more zip. Next time I'll increase rum and seasoning by 50% and maybe add a little red pepper or hour sauce.

Good but needs more kick. I added some green pepper strips. Also sprinkled with about a teaspoon more jerk seasoning when putting oven. Think next time I'll increase rum and jerk seasoning by 50% and maybe add a few dashes of hot sauce to the marinade.

Any suggestions for what can be substituted for rum?

Don't want to use alcohol? No problem. Just substitute 1 teaspoon of rum extract mixed with 5 teaspoons of water and you're good to go!

where get dried jerk seasoning? I used BBQ rub but needed add 2 more oz of dark rum, not light.
