Pleasin' Beefy Chicken Bake

What do we do when the gang can't agree on beef or chicken for dinner? We give 'em exactly what they want - an easy one-pot dish that'll please one and all!

What You'll Need

  • 1 (2 ¼-ounce) jar dried beef, rinsed and chopped
  • 6 boneless, skinless chicken breast halves (1-1/2 to 2 pounds total)
  • 1/4 teaspoon black pepper
  • 1 (10 ¾-ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 2 tablespoons real bacon bits

What to Do

  1. Preheat the oven to 350 degree F. Spread the chopped dried beef over the bottom of a 9" x 13" baking dish that has been coated with nonstick cooking spray. Season the chicken breasts with the pepper and place over the beef.
     
  2. In a medium-sized bowl, combine the soup and sour cream; mix well and pour over the chicken. Sprinkle with the bacon bits and cover tightly with aluminum foil.
     
  3. Bake for 50 minutes. Uncover and bake for 10 to 15 more minutes, or until no pink remains in the chicken and the juices run clear.
     
  4. Stir the sauce and spoon over the chicken before serving.

Notes

  • Make sure to cook a large batch of egg noodles or some rice to serve with this so you can enjoy every last bit of sauce.

There are some great suggestions here! Thanks, guys! I wonder why you have to rinse the dried beef? It's pretty salty, so is it to rinse some salt off? Isn't this the Armour dried beef in the small glass jar? My suggestion is to make a light crunchy top with some Panko and graded sharp cheddar. I would also use the smaller part of the chicken breast like chicken strips are made from or cut the breasts in half to make smaller portions for smaller appetites like kids'.

Sounds great as is, but recipes are for playing withSo many ways to make variations and change the character of the dish. I think I may try this with cream of mushroom soup, with a bit of dry sherry added!

A friend served this at a luncheon years ago. Great recipe, but just remember you HAVE to bake it 50 min, etc., just as it instructs you to do. If you use six chicken breasts, you must double the recipe for the other ingredients. Before it's finished baking, cook your rice. At serving time, spread the HOT rice into a corning casserole dish. Spread the Chicken Bake over the rice. Dependable & Delicious!!

I make substituting cream of mushroom and country ham. Excellent served with noodles or rice.

One could also add a cup of rice & some white wine or the same amount of water that goes in the can of soup& pour that all on top of the chicken as well. I have a a few recipes like that. One is called Parisian Chicken, & is quite tasted. It would also be good over noodles or the carbs could just be integrated in with the recipe.
