Lemony Frozen Iced Tea

This Lemony Frozen Iced Tea is one of our favorite ways to stay cool during the summer! It's important to stay hydrated while you're having fun-in-the-sun, so serve this up to the kids! To make it company fancy you can dress it up with lemon slices and mint. No matter how you serve it, this change-of-pace dessert is going to be a totally new way to feel refreshed!
What You'll Need
- 6 1/2 cups water
- 6 tea bags
- 1 cup sugar
- 6 tablespoons fresh lemon juice
What to Do
- In a soup pot over high heat bring water to a boil. Remove soup pot from heat and add tea bags; let them steep 10 minutes or until desired strength. Remove tea bags from water and discard.
- Add sugar to tea, stirring to dissolve. Stir in lemon juice and allow to cool.
- Pour tea mixture into a baking dish, cover and freeze at least 6 hours, or until firm.
- Remove from freezer and scrape entire mixture with a fork until fluffy. Serve immediately or spoon into a freezer container and keep frozen until ready to serve.

I have had bottled iced tea from the shops but I have never had a homemade one, is there a certain type of tea bag I should be using? Could you use a sweetener instead of all the sugar? If you used a sweetener would you still use the same amount as you would sugar?

Hello! No special tea bag is needed. You can just use a regular tea bag. If you're using Stevia or Truvia, you can use the same amount. If you're going to use Splenda, cut it in half, but also, make sure to check the box for exact usage.

In all my life I never thought about freezing tea as a refreshing summer treat. We always have a pitcher of tea in the fridge and now I can house it in the freezer as well. We reserve tea for sit down meals because of the sugar but I could think of worse things to give my kids.

Being raised in the south, you can not go wrong with this recipe. I have family set to come visit and this would be a nice beverage to serve on the hot summer days when they are scheduled to come. I plan to use my sweet husband as my taste tester first. He loves his job!

I'm going to really like this! With stevia. But how long does it take to scrape it with a fork? I want to make a lot for my Memorial Day picnic at my house. I'll have to try to make a little bit and see if I can do it fast enough and make enough for the whole picnic. I wonder if you did it before it was solidly frozen if it would work better and then put it in the freezer when it was still fluffy. People love that on a warm day and to bring that frozen ice tea slushy out and especially since it has lemon juice in it. Thanks for the great idea!

Could you substitute Stevia for regular sugar? Not sure if you can boil Stevia.
