What You'll Need

  • 2 cucumbers, thinly sliced (see Tip)
  • 4 scallions, thinly sliced
  • 1/2 small red bell pepper, chopped
  • 1/4 cup sour cream
  • 3 tablespoons white vinegar
  • 3 tablespoons sugar
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a medium bowl, combine cucumbers, scallions, and red pepper.
     
  2. In a small bowl, combine remaining ingredients; pour over cucumber mixture. Cover and chill at least 2 hours before tossing and serving.

Tip

  • The cucumbers can be peeled or unpeeled, or you can "stripe" them by running a fork or vegetable peeler down them before slicing, to give them a fancy, ridged look.

Very good and easy to make

I made this recipe a few times in the summer of 2017, and I'm looking forward to fresh cucumbers from the garden so I can do it again in 2018. This was delicious!

to olgoat6 I believe you have misread the recipe. It says 3 tbls white VINEGAR and 3 tbls sugar.

The recipe says 3 tbls of white sugar and the next ingredient is 3 tbls of sugar. Is this a misprint or do you really use 6 tbls of surar ???

I love cucumber salad but I made it with mayo. I need a lighter version, and this was good. The sour cream gave it a lighter creaminess than mayo but great alternative. I put cherry tomatoes in it, too.

Love cucumber salad can't wait I grow my own cucumbers tomatoes and zucchini along with fresh dill and pumpkins from seed in my tiny garden every year.. up here in the North have to wait till soil warms up a little more I use apple cider vinegar instead of white vinegar always much healthier and about 1 1/2 teaspoons Splenda 3/4 teaspoon salt Recipes are great for ideas and suggestions and helpful hints like adding a splash of milk to make it more creamy as Wisconsin Packers Girl suggested if needed, is great too GO PACKERS!

I would like to make this for about 30 & I'm not good at "how to increase recipe". Help!

I made this recipe today and I was VERY disappointed!! I made it according to the recipe instructions exactly, and it just seemed that it didn't turn out very well. It seems that there wasn't enough sour cream so I added about 1/2 cup instead of 1/4th cup, I also put ALOT less salt in it as I have health issues, with sodium. I also added celery seed, AND Milk and really had to "doctor" this recipe up, as it just seemed that the amout of the sauce that this recipe calls for just isn't enough. I remember eating this at family picnics and whatnot, growing up, and after I added the things I added to it, it turned out ALOT better. This recipe just isn't right, in my opinion. AND you need to add celery seed to it.

Excellent! Followed recipe except didn't have scallions so used some thinly sliced onion and had green pepper from garden so used that - lost a little contrasting color but the taste was great. I cut sugar to 1 TBL and it was sweet enough for our tastes.

Excellent "old time" recipe can vary it to suit your needs can use mayonaise, sour cream, yogurt no fat , low fat full fat and you can use Splenda or Sugar twin instead of sugar Still a great recipe But no fat means much less flavor I have used sugar Twin and you can not tell the difference

Recipes vary and I have used my mom's for yrs. but I'm not opposed to trying others. But I fail to understand why some people must criticise recipes that are offered here. I use this site as a tool to improve or make changes to some of my recipes. I really appreciate other suggestions from other cooks as an option and would never criticise them for it.

I agree. My son always wants to know how I changed a "new" recipe that I have made. I usually take the basic recipe and sometimes have to substitute when I don't have the exact ingredient. But that's what makes cooking fun. I changed a recipe so much the other night that my son actually laughed when I told him what I used. But I notice he cleaned his plate. PS my son is an adult and has been staying with me the last 3 months. I have really enjoyed having someone around who always compliments me on my cooking. lol

I enjoyed this recipe and thanks to Joliettim I added some green onions For Drozdibob there are excellent non fat sour creams on the market and you will not be able to taste the difference And please don't be rude to someone elses's comment, since your's was all about cream

I don't think 1/4 cup sour cream to 2 whole cucumbers is a lot of "...cream, cream, cream..." and there are no fat or low fat sour creams available. I have made a very similar salad to this version for years, as did my Mother, Grandmothers. You can also use non-fat yogurt in place of sour cream. Put yogurt in a colander lined with a paper coffee filter in the fridge and let extra moisture drip out. Also, Don't get your bvds in a bunch with the sugar. If you don't like it don't use it! As a rule, if I am making a brand new recipe for the first time, I make it according to the recipe, Second time around, I will alter it to suit our tastes. Doesn't everyone else do this too?

No offense-but why do folks from France use so much cream, cream, cream?

IN FRANCE WHERE I AM FROM WE NEVER PUT SUGAR IN SALAD LIKE U DO IN AMERICA AND I REALLY DON'T SEE THE REASON WHY EVERYTHING HAS TO BE SUGAR SUGAR SUGAR. IT'S RIDICULOUS. A GOOD " VINAIGRETTE " DOESN'T NEED SUGAR.
